potatoes done 2 ways

i had a few potatoes and a hankering for some snack-y food for the midnight hour. this is how 2 recipes were born...

4 mid sized white potatoes (baked, cut in half and scooped out)
1 tbsp chopped jalapenos (i like spicy - could omit)
1/4 c sour cream
1tsp taco mix
a few tbsp of shredded nacho mix cheese
- i sprayed the potato skins with a bit of oil and baked them again for about 15min in a 350 toaster oven
- mashed the potatoes with the sour cream and taco mix - actually ended up using a mixer

- used about 2/3 of the mix for recipe one
- added cheese and jalapenos to bottom of potato shells, then mashed mix, then cheese and jalapeno on top
- 350 again for about 15min
...these were tasty and easy to eat

for the second recipe no jalapenos and 1 tbsp of parmesan cheese instead of shredded
- i used the rest of the mix, blended with parmesan and fried them like little pancakes

- yum!

potatoes for the bbq

mmmm
love finishing off potatoes on the bbq
so easy and delicious and really allows for dozens of variations

ingredients
8 small yellow potatoes
1tbsp fresh chopped parsley from the garden (flat kind)
1tbsp minced garlic
dash of salt
2 tbsp butter

i boiled 8 small yellow potatoes until soft with a fork
cut into cube-like pieces and into a bowl
tossed with a bit of salt
melted butter with garlic in microwave for 20 seconds
poured over potatoes and toss to cover evenly

spray some aluminum foil and put potatoes on foil and loosely close
5-10 min on the bbq

SOOOOOOO divine. i swear b(bq)+b(utter) = taste joy. so good i made them twice this week

potatoes reinvented in pasta sauce

on the menu - leftover pasta sauce, lamb chops, potatoes, and green onions
so chopped the already cooked potatoes coarsely (about 4c)
and the already chopped green onion (about 1c)
and into the skillet with a bit of olive oil
added the pasta sauce above to the mix (my dad made the sauce and i need to get the recipe for it as it has tonnes of veggies and a little bit of meat in it and my 10mth old will eat this straight from the container!

heated in the skillet until nice and warm and reheated the lamb chops for another tasty, leftover meal.

crustless potato and leftover quiche/casserole

it was all about trying to use up the leftover potato wedges in a creative way. it was kind of rainy out so i wanted to do something that was like a quiche/casserole - a stand alone meal.
as you can see by the array of photos (still not so good with the new blog editor...yikes)
i used a lot of different ingredients.
so here is the rundown

enough potato wedges to fill the bottom of a circle pyrex baking dish
4 eggs (i use local free range eggs so they are between med/large size
8 large black olives sliced
1 tsp minced garlic
1 large tomato chopped
leftover pizza sauce (about 1/4 c)
2tbsp of asiago and artichoke dip (optional
1/2 c of nacho shredded cheese
potato wedges on the bottom
then add chopped tomatoes
olives
and in a bowl mix all other ingredients except for cheese

pour mix as evenly as possible over the potatoes/tomatoes/olives
top with cheese
cook covered in a 375 oven for about 30-35min

this was a fun experiment that was really tasty. was good for about 4 adult servings as a main dish. didn't need anything else with it, and used up leftovers...beautiful!

potato nachos


i had some potatoes that needed to be used up and it was raining so didn't want to grill them

so thought, why not try and make them nacho style

potatoes
4 potatoes
sliced
sprayed foil with pam
and 375 for 30 min

salsa
i always make a similar salsa
2 tomatoes
about a tablespoon of jarred jalapeno peppers
2 tbsp cilantro
1 spring onion
squirt of lime juice
- all in the blender
salt / pepper to taste - i don't always do this
- i didn't strain it as the extra liquid is great for the potatoes

remove already baked potatoes from oven - add the homemade salsa, cheese and sprinkle a bit of taco seasoning

back in the oven until cheese bubbles

YUM - i didn't know if this would work out, but wow it was really delicious and something i'll make again
these weren't greasy, they held the toppings well, and you could get pretty creative with toppings (will do so next time)

salmon and potato pancakes

i had lots of leftover potato from making enough potato skins as part of supper and as leftovers.

growing up i always loved potato pancakes, and traveling - especially through china, seems potato pancakes are popular in other parts of the world too.

so in order to make potato pancakes - what i did do with the potatoes when i was making the potato skins was put the potato in a bowl with butter and mashed them.

so i divided the mashed potatoes into two bowls (and mixed an egg in with each half). then this is how i made variations...

asian style pancakes
- mashed potatoes (about 4 med/large sized potatoes worth
- egg
- tsp of minced garlic
- tsp of soy sauce
- tsp of fish sauce
- 1 green onion chopped
mixed all these ingredients together and made into patties/pancakes. pan fried in a tiny bit of oil. serve with siracha sauce if you want spicy, or soy sauce for savoury.

- mashed potatoes and egg as above
- 1 tsp of sugar
pan fry
serve with jam (yum!) or butter
i love these as a snack and great because they are gluten free so no chance of heartburn either!

salmon
i make a simple teriyaki sauce - ginger, soy sauce, minced garlic, and honey
marinate for about an hour
cook on foil in the oven at 375 until salmon flakes. use the marinade and pour on top of salmon before placing in the oven. use enough foil to tent the fillets so that they are covered enough to not dry out.

okay - this was a delicious supper. i love potatoes done as pancakes...seriously i could eat them all day.

baked wings and potato skins

so wings and skins it was
i don't often make chicken wings and i made modifications to the following recipes...

baked chicken wings - i added honey as the sauce didn't have enough flavour as posted in the recipe. these were okay/good, but i would have also used less flour than called for.

potato skins - these were time consuming but tasty. the only modifications i made was using one of the shredded cheese blends (kraft nacho cheese mix), and turkey bacon. my 3 year old liked these too.

what did i do with the extra potato? i saved it for the next day and made asian style potato pancakes.
