breakfast muffins/cakes

i am not a huge fan of using tapioca flour as my main gluten free flour but that's what i had and bad me i didn't put it after beer on my grocery list...so a nice, tasty, fat-filled frosting made up for that (just a little goes a long way)
3 bananas mashed, 1 egg, 1c tapioca flour, 1/2c bobs gluten free mix, 1 tsp baking powder, 1/4c water, 1/2tsp cinnamon, 1c turbinado sugar, 1tbsp butter - all mixed in a bowl and a 350 oven about 20min.

similar ingredients to above just used a chopped apple instead, added 4tbsp of my homemade caramel sauce and a bit more water.

homemade icing to cut the taste of tapioca flour (it's really starchy but the only gluten free flour i had other than a tiny bit of bob's mix) so - 1/4c shortening, 2tbsp homemade caramel sauce, 1.5c icing sugar, 1tsp vanilla, 3tbsp table cream all whipped up...yum!

zucchini breakfast slices

i just wanted something new for breakfast so i did some experimenting in the kitchen last night and came up with these slices. i love inventing new recipes - i love the creative process, and this week so far i am having a pretty stellar week on the coming-up-with-new-recipes front. i'm sharing because well, they are gluten free and hold well together kind of like quiche.

ingredients
4 large eggs
1/3c oil (veggie, evoo, whatever, nothing too strong
2c grated zucchini - include skin
1c grated cheese (i used marble cheddar
1.5c chopped onion (i used spanish
4 slices of chicken bacon (crisped and crumbled
1tsp minced garlic
dash of salt
...mix all of these in a bowl
then add
1c gluten free flour - i used 1/2c sorghum and 1/2c potato flour
1.5tsp baking powder
and mix

grease a baking pan - mine is about 8x12

put it into a 350 oven for 35-40 min and allow to cool before cutting into slices

these are making me look forward to my quick weekday breakfast, sleep-deprived, messy and unwashed self with this slice and a coffee to revive me! i am making these again, and may try other flavours.
